Chai + Peppercorn White Hot Chocolate

Ahhhhhh, cold winter nights…(You know…the ones that get down into the 50’s)…perfect for sipping boozy hot chocolate and snuggling into your favorite blanket with your favorite chicken. Just me? Okay then.

Well, at least humor me and try some of this El Mayor Cristalino Tequila-soaked white hot chocolate. It’s spicy, it’s sweet, it’s boozy…and it’s topped off with tequila-infused whipped cream because I can.

This crystal-clear añejo rolls together so well with the flavors of this beverage; the toasty chai spices really work well with the aged, complex character of the añejo, but then, because El Mayor Cristalino Tequila has been finely filtered, you get those bright blanco tequila notes, too, which really zing with the addition of peppercorns. And chocolate just goes well with everything, okay?

 

CHAI + PEPPERCORN WHITE HOT CHOCOLATE

Makes four servings

  • 4 cups whole milk

  • 6 ounces El Mayor Cristalino Tequila

  • 4 ounces high quality baking white chocolate, chopped

  • 4 chai blend tea bags

  • 1/2 teaspoon crushed pink peppercorns

  • 16 drops orange bitters

  • 1/2 teaspoon pink peppercorns + 4 star anise pods + 4 dried orange wheels for garnish

  • 1 cup Sugared Tequila Whipped Cream (instructions below)

    • 1 cup whipping cream

    • 1 tablespoon El Mayor Cristalino

    • 1 tablespoon granulated sugar


      To make the Sugared Tequila Whipped Cream: whisk cream in a bowl just until peaks form. Add tequila and sugar and continue whisking until stiff peaks form. Place in fridge until ready to use.

      To make the cocktail: in a small saucepan over medium heat, heat milk until it just starts to simmer around the edges. Add chocolate and peppercorns, whisking until chocolate is fully dissolved. Remove from heat and add teabags. Allow to steep for a few minutes, then carefully remove teabags from liquid and discard.

      Add 1.5 ounces of tequila to the bottom of each of four mugs. Strain approximately 5 ounces of hot chocolate mix into each glass. Add 4 drops of orange bitters to each mug, then top with a dollop of whipped cream. Garnish with a dusting of crushed pink peppercorns, a star anise pod, and a dried orange wheel.
