Meyer Lemon Colada

When your brother and SIL come visit and bring you giant Meyer Lemons from their freakishly productive tree, you make cocktails. Always.

And when it's roughly National Piña Colada Day...you make Meyer Lemon Coladas. And you take photos of them in front of your chicken coop because you just also posted a tour of said chicken coop.

 

MEYER LEMON COLADA

Makes two servings.

  • 6 oz. fresh Meyer Lemon juice

  • 4 oz. lite coconut milk (shaken thoroughly)

  • 4 oz. light rum

  • 4 cups of coconut water frozen into ice cubes (about two trays worth)

  • 2 oz. falernum syrup

  • Meyer lemon wedge for garnish

Combine all ingredients in a blender and blend until smooooove. 


 

Yes, I like Piña Coladas.

Everyone makes that joke in their Piña Colada posts, don't they.

But Meyer Lemon Coladas are pretty damned refreshing; kinda a lighter version of the piña variety and I ain't mad at it. Ain't mad at all.
